Easy to stir-fry zucchini recipe

Stir-fried zucchini is a quick, easy and healthy side dish. Thanks to the delicious garlic butter, this is one of our favorite zucchini recipes. You only need five minutes to cook, and now it’s time to have a meal!
There are many ways to cook zucchini, but the quickest way is to flood the pot on the stove or sauté it. By cooking the zucchini this way, it develops a golden brown exterior and a tender caramel interior. This stir-fried zucchini recipe takes only 10 to 15 minutes from start to finish, which is why it quickly became one of the most popular zucchini recipes on the blog.
I love sauteed zucchini as a side of our healthier entrees such as lemon dill grilled salmon, relaxing turkey patties or these lemon grilled chicken breasts. I even threw it into the butter noodles and loved it!
Key Ingredients
- squash: My favorite zucchini. Any larger, middle person is too mushy and pumpkin for me. When buying zucchini, look for them to be dark green and sturdy. I recommend all zucchini recipes like roasted zucchini with feta or my zucchini boat!
- butter: Adds nutty flavor and helps the zucchini turn brown. You can replace it with olive oil.
- garlic: I love the garlic butter in this zucchini recipe. It’s really delicious.
- Green onion, lemon juice and parmesan cheese: These are optional, but make the zucchini particularly delicious. I like to stir the sliced shallots before serving, splashes of lemon juice and some parmesan cheese.
How to make fried zucchini
Use a wide frying pan when stir-frying zucchini. This way, the zucchini can be spread and browned instead of steaming each other. (I use the same trick when cooking mushrooms.)
You will heat the skillet over medium heat, add some butter, and when it melts, throw it into the garlic and zucchini. Spread them in a frying pan and let them brown somewhere. I won’t stir too much, so there’s more chances of browning for the zucchini.
When you see some brown spots, stir and cook until the zucchini is tender. Then, season with salt, pepper and optional ingredients such as shallot, lemon juice and parmesan cheese. Adding salt to the ends will prevent the zucchini from becoming mushy and moist. (I often use this technique when cooking zucchini, like when making these garlic basil Zucchini noodles.)

Recipe changes
Stir-fried zucchini have many possible recipe variations. Here are some of our favorites:
- Make it cheesy and add more crushed Parmesan or other cheese before serving. I love feta!
- We like the combination of garlic and butter, but you can use other spices. Try Italian seasonings, Za’atar spice mixtures, Cajun seasonings or Indian spice mixtures (such as curry or chili powder).
- Add toasted sliced almonds or buttered pine nuts for extra crunch.
- Stir the chopped tomatoes and cook until the zucchini is crisp and the tomatoes collapse a little, releasing some juice.
- Stir cooked or canned beans, such as white beans, chickpeas and black beans.

You will need
1¼ lbs chopped zucchini, 2 medium
1 tablespoon butter
1 tablespoon chopped garlic, 3 cloves
1 shallot, sliced thinly, optional
1 teaspoon fresh lemon juice, or more optional taste
1/4 cup freshly ground Parmesan cheese, optional

1How you cut the zucchini is up to you. You can cut it into circles, cut it into half a month or cut it into bite-sized pieces.
2Melt the butter in a wide skillet over medium-high heat. Add the zucchini and garlic and cook, stirring occasionally, until the zucchini is browned in some places and tender for 3 to 5 minutes.
3Turn off the heat, add the scallions and cheese (if used), and squeeze in the lemon juice. Flavor and season with salt and black pepper. Service now.
