Sesame, Ginger and Shrimp Marination Recipe

This easy-to-be-fried shrimp marinated is perfect for grilling or grilling! Ginger, garlic, fish sauce, sesame oil and honey produce a delicious, sweet, sticky glaze.
Chef Richard created this simple shrimp marinade recipe. We wanted something bright, enthusiastic and a little spicy, and he sent it! It has some of my favorite ingredients: ginger, fresh lime, fish sauce and toasted sesame oil.
We let the shrimp marinate for 30 to 60 minutes. No more or acidity will start to “cook” them. This marinade is perfect for shrimp, chicken, tofu or beef. It’s fast, easy, and always makes me happy. I like to serve this pickled shrimp with coconut rice or coriander lime rice.
Key Ingredients
- shrimp: For best results, I prefer large or giant shrimp. They are unlikely to overcook and dry. Looking for a firm fresh shrimp that tastes a little sweet. If you freeze the shrimp, thaw and drain them before marinating.
- Fresh ginger and garlic: Ginger adds warmth and subtle spicy flavor, and garlic complements all other Asian flavors. Fresh is best for these.
- Coriander and green onion: These will give you a sense of color and freshness. I like to use the white and lighter green portions of the green onions for marinating and keep the darker green tops to slice and scatter on the cooked shrimp.
- Soy sauce or tamari: Use what you like. If you don’t care about gluten, I recommend using gluten-free certified tamari.
- lime: This will brighten everything and increase acidity, making everything taste better. I usually buy extra lime and use it for service.
- Honey: After cooking, the honey turns the marinade into a slightly sticky glaze. You can substitute maple syrup.
- Fish sauce: This magical ingredient adds a delicious umami flavor to the marinade. I suggest Red Boat Sauce. If unavailable, look for fish sauce in glass jars, which tend to be of higher quality.
- sesame oil: Toasted sesame oil will provide nutty richness and a wonderful aroma.
- gochujang: This North Korean-fermented chili sauce adds light to medium calories. You can adjust the amount you like, or use Sriracha instead. I also use it to make our homemade seafood sauce.
- Dijun mustard: This adds a subtle shredded soup to make the marinade more fun. I love Eryang Mustard Sauce and use it when making the chicken marinade.

How to make shrimp marinade
This marinade blends in just a few minutes and is perfect for busy weekdays and entertaining guests. To do this, mix all the ingredients in a bowl or zipper bag. Then, add the shrimp and marinate for 30 minutes to an hour.
This schedule allows the shrimp to absorb the flavor of the marinade without getting tough. This is especially important if the marinade has acidic ingredients, such as lime juice from this Asian marinade. Shrimps that have been marinated for more than 60 minutes will start to “cook” the shrimp, making it more similar to shrimp ceviche.


We love this marinated shrimp that we cook on the outdoor grill or on the stove using a baking tray. You can also bake marinated shrimp on a high heat in the oven, which will make honey caramel.

We love this Asian style shrimp marinated. Rapid the shrimps quickly, 30 to 60 minutes is perfect. Never start “cooking” shrimp in lemon juice again. This marinade is great for grilling shrimp, but you can bake it in the oven or cook it in a skillet. Below, we provide tips for all three cooking methods.

You will need
1 lb (450g) large or giant shrimp, peeled and removed
1 tablespoon chopped fresh ginger, ½ inch
1 tablespoon chopped garlic, 3 cloves
1 tablespoon chopped fresh coriander
1 tablespoon chopped green onion
1 tablespoon fresh lime juice
1 tablespoon toasted sesame oil
1 tablespoon honey
1 tablespoon soy sauce or tamari
1 tablespoon fish sauce
1 teaspoon gochujang, see notes
1 teaspoon of simplified mustard
1/4 teaspoon fine sea salt

- Pickled shrimp
1Mix the shrimp marinade ingredients in a bowl or zippered freezer bag. Let the shrimp marinate for 30 minutes to 1 hour.
2If using skewers, dip the wooden skewers in water while marinating the shrimps to avoid burning on the grill or in the oven.
- Cook shrimp
1Barbecue (recommended): Preheat your grill or baking tray to medium heat. Extend the shrimp to the string in the opposite direction (touch the head, outward tail) for flat strings. Please refer to our photos for reference. Put the string through the head and tail of each shrimp. They look like an interlocking circle that keeps the shrimp skewers flat.
2Bake on each side for 2 to 3 minutes until opaque and cooked.
3bake: Preheat the oven to 400°F (200°C). Spread the shrimps in a single layer on a baking sheet and bake for 5 to 7 minutes, or until opaque and cooked.
4Frying pan: Heat the frying pan over medium heat. Cook for 5 to 7 minutes until opaque and cooked. Observe the burning honey in the pot (maintaining heat between medium heights).
Adam and Joanne’s Tips
- Frozen shrimp: Melt and drain frozen shrimp before marinating.
- gochujang: We are Korean chili sauce and found mother-in-law’s gochujang in the shops around us. It can also be sold in Asian or Korean markets. Although the taste is different, Sriracha is a great alternative to this marinated recipe. or missing.
- The best way to cook: This marinade works exceptionally well on an outdoor grill or baking dish. Baking in the oven is our second best approach.
- gluten free: Use gf tamari and make sure all other ingredients (especially fish sauce and gochujang) are not obviously gluten.
