Simple homemade buffalo sauce

This simple homemade buffalo wing sauce has some simple ingredients The taste is better than the store-bought bottle. Plus, it can be stored in the refrigerator for several weeks.
Thanks to Buffalo, NY, we have Buffalo sauce (Hooray). This Buffalo Wing Sauce is very simple at home. I like to put a batch in the refrigerator and prepare to toss with chicken wings and drizzle with rice and salad.
Our recipe below makes medium buffalo sauce, but I provide tips to make it more fragrant!
Key Ingredients
- Hot sauce: For this recipe, use your favorite Cayenne Pepper hot sauce (a short list with natural ingredients like Cayenne Pepper, vinegar and salt). I like the crystal hot sauce, but we also used Frank’s hot sauce (not the wing sauce) and Tabasco. We are also making homemade hot sauce recipes to make this sauce 100% from scratch (stay tuned).
- butter: Make this homemade sauce so creamy and silky.
- Garlic powder: Added more flavor to our sauce. If you like, you can also use fresh ground garlic. I recommend 3 to 5 small garlic cloves, but will chop or grind them.
- Honey (optional): After years of sauce, chef Richard convinced us to try a little honey and we love it. If you want to try it yourself, add a drizzle to the seasoning. It balances and perfects the flavor of the seasonings very well.
How to make buffalo sauce
Are you ready to see how easy it is to make Buffalo Wing Sauce at home? You will melt the butter over low heat. We wanted to melt the butter gently to keep it creamy (not the brown butter was terrible, it was delicious, but not the wing sauce we wanted).

When the butter melts, remove the pan from the heat and stir in the hot sauce and garlic powder. Stir until the sauce is smooth, combined and red. I showed Frank’s hot sauce in the photos, but remember that you can use your favorite hot sauce (such as locally made hot sauce, crystal or homemade).


How to use Buffalo sauce
The most popular use in this buffalo sauce is to use with chicken wings, but it can be used in many other ways. You can turn it into a buffalo chicken dip and then make a Buffalo chicken pizza, and I like to swap the chicken wings for cauliflower to make these vegetarian cauliflower wings.
Drizzle with scrambled eggs and add to the scrambled eggs on salad and rice bowls, pasta or eggs thrown with grilled shrimps, are also delicious.
When using this sauce, I also like having a batch of homemade blue cheese or ranch seasoning nearby.

This homemade buffalo sauce recipe is easy! Use your favorite hot sauce (not bottled wing sauce) as this recipe. Our recipe is a medium spicy sauce. Add chili sauce (pinch or more) as the hot sauce. Reduce the hot sauce by 1/3 to 1/2 cup to make the sauce gentler.

You will need
1 cup (8 oz) unsalted butter
2 teaspoons garlic powder
1 cup hot sauce, such as Frank or Crystal
1 to 3 teaspoons of honey, optional, see tips
Chili peppers, optional to make it spicy

1Melt the butter gently over low heat until melted (it takes longer to use low heat, but we want to keep it creamy).
2Remove the pan from the heat to prevent the sauce from cracking. Then, stir in garlic powder and hot sauce until a sticky sauce forms, about 1 minute. Taste and then, if you want the sauce to be spicy, add a little or more chili.
3Use immediately or store in the refrigerator in an airtight container for up to 2 weeks. It will harden, so reheat gently on low heat, if stirring separately or shake.
Adam and Joanne’s Tips
- storage: Store homemade buffalo sauce in an airtight jar in the refrigerator for 2 weeks. The sauce will harden in the refrigerator (due to butter), but you can use a spoon to remove what you need from the jar and gently reheat the seasoning on low heat before using. If the sauce separates when you reheat, stir or shake. I don’t recommend frozen this sauce.
- Fresh garlic: Instead of garlic powder, add 1 to 3 finely ground or chopped cloves of garlic to butter and cook over low heat for 30 seconds. Remove from the heat and add the hot sauce. For the smoothest seasoning, mix until smooth.
- Vegetarian Friendly: Replace butter with vegetable butter.
- Honey: Chef Richard convinced us to try a little honey in buffalo sauce and we fell in love. Try it for yourself and you will find that it balances the heat and rounds the flavor very well.
