Tomato Salad – Pence with Pent

This tomato salad recipe is a staple all year round, especially in the summer! Fresh tomatoes, red onions and herbs simply dressed in simple side dishes.

Tomato tips

While this tomato salad is an easy side, it is full of flavor. It is best to pair with fresh vine ripe tomatoes during the summer months, but I make them year-round.

  • Cut large or heirloom tomatoes into wedge-shaped or bite-sized pieces.
  • Cut cherry tomatoes or grape tomatoes in half so that the dressing can be absorbed.
  • No need to drain the juice or remove the seeds.

  • Herbs: Fresh oregano, dill, fresh basil leaves or mint.
  • cheese: Try the tomato salad Feta cheese cheese, burrata or Bocconcini (Fresh mozzarella).
  • Other additions: Add some chopped garlic, avocado, garden vegetables, chopped bells or fresh zucchini.

This salad is all about tomatoes, so I keep the seasoning simple with red wine vinegar, olive oil and salt and black pepper. You can use other types of vinegar, such as balsamic vinegar.

I prefer to eat this dish at room temperature.

Pair it with grilled chicken breast, grilled pork chops or grilled shrimp!

If you are lucky enough to have leftovers, this salad stays in good condition in the refrigerator, allowing the flavor to be marinated. I love having a healthy lunch the next day.

Fresh tomato salad

Fresh garden tomatoes are mixed with herbs and onions and tossed into a simple vinaigrette mixture.

  • Place the tomatoes, cheese (if used) and red onions in a shallow bowl.

  • Drizzle with olive oil and red wine vinegar. Combination of toss and tricks.

  • Season with salt, pepper and fresh herbs.

We added a total of 1 tablespoon of fresh herbs and combined them together according to the amount on hand. If you like, add extra.
Large tomatoes can be cut into sized pieces. Do not remove juice or seeds.
This salad is best served at room temperature, but can be refrigerated if you prefer.
Store the remaining tomato salad in an airtight container for up to 1-2 days. Stir and serve again.
